Week 4 of my $60 Budget

I didn't do a lot of shopping this week, but I didn't use a lot of coupons, either.

I spent a total of $52.13. $23 on meat because my Hubs said he was getting tired of chicken. :)

Just a so-so week.

Menu Plan: April 27th-May 4th

Menu Planning is about the last thing I feel like doing this week. Between my Bebe Girl's first birthday, preparation for a small couponing workshop, launching my new business, and my grandfather having a heart attack, I'm not sure how much I'll stick to a plan this week.

Our NEW Garden!

Do you remember in Genesis after Adam & Eve ate that stupid little apple?

God told Eve (and all women) she would experience pain in childbirth. I did that. With an anesthesiologist by my side. :D

God told Adam (and all men) that they would have to work the ground for their food and basically, it's not gonna be easy!

Well, get to it Honey! I let him use a tiller to ease his pain. :)



Might as well get the little guys working, too!




We found an entire tree stump underground, roots and all. That was loads of fun! (Sarcasm drips from monitor, right?) Then there's that lovely Mississippi clay that just wants to recompact as soon as you dig it up.

Eventually, we made it through! Here's our pretty new garden:

We'll have carrots, green beans, green peas, black eyed peas, Lima beans, yellow squash, Zucchini, Roma tomatoes, regular tomatoes, jalapenos, red chile peppers, bell peppers in three colors, mixed salad greens, and herbs. We're seeing little sprouts all over, and we just planted seed on Saturday. We transplanted the peppers and regular tomatoes.

This was NOT very frugal, I will admit. We had to get a lot of dirt and fertilizer stuff. We didn't own a proper shovel before this, either. I'm still hoping it will pay off in the end.

I can't wait to show you our harvest!

Menu Plan: April 20th-26th

I know I’m a little late for the whole “Menu Plan MONDAY” thing…

Monday: Enchiladas

Enchiladas


I forgot to take a picture of all the ingredients together, but here they are:

Precooked Shredded Chicken: .70 (Ground beef, shredded beef, shredded pork, etc. works well, too!)
1 Jalapeno & 2 Serrano Peppers, chopped: .25 (or use a small can of diced green chilies for about $1)
1 block of Cream Cheese: $1
1 pack of Flour Tortillas (soft taco or fajita size): .75
2 cans of Enchilada sauce: FREE
Mexican cheese: approx. .50 worth

Total Meal Cost: $3.20

1. In a large skillet, cook or warm your meat.


2. Add cream cheese and peppers/chilies. Stir until cheese is melted and peppers/chilies are dispersed.


3. Spoon mixture onto tortilla. Roll tortilla and place in large baking dish.



4. Once all tortillas are rolled, pour enchilada sauce over the top.


5. Top with cheese.


6. Bake at 375* for 30 minutes.

Week 3 of my $60 Budget

I came out about the same this week. I spent $56.29.

$11.99 was baby formula, and I am counting the DAYS until I can switch Bebe Girl to whole milk. It's 8.

I bought four newspapers for a total of $5.26.

I guess I'm doing pretty well on $60 a week, but there haven't been any major stockpiling opportunities since I started this budget. One good sale might be too much for me to handle!

BBQ Chicken Dinner

I just put chicken in the crockpot, covered with barbeque sauce, and cooked on high for 4-5 hours. The chicken barely even stayed together to get it on the plate for this picture!

I stayed under my budget this week, spending $51.22 from April 8th-14th. But I'm not overly impressed considering I didn't buy any newspapers and I didn't do much stockpiling.

My savings for the week was $305.43.

I guess I'm still on target. This week looks slow on sales, so maybe I'll do even better.

Exciting CVS News for Local Readers!

I don't yet have a cute nickname (The Heavenly Printer???), but we now officially have it in central Mississippi! The price scanners that are capable of printing coupons when you swipe your CVS ExtraCare Card!



CVS in Madison has it. CVS in Flowood has the capability, but they've yet to have it properly loaded and functional. I haven't been to CVS in Brandon lately, but I'd bet they've got it now, too. The Canton Mart location likely would, as well.



Just scan your card and collect your coupons! It doesn't get any easier! You can usually get something with two scans. After that, it tells you to try next time.

Chicken Broccoli Braid Recipe


This recipe is so simple and the best thing about it is that it is completely SUBSTITUTABLE! You can use any meat, any veggie, any cheese that you have on hand. There's also no measuring required!

Here are the ingredients I used and their costs with sales and coupons:


Precooked chopped chicken : approx. 75 cents (I used 2 breasts for 4.5 people)

Cooked or Thawed bag of Frozen Broccoli: FREE

Shredded Cheddar Cheese: approx. 63 cents (I used about half a bag)

Mayo: approx. $1.00 (I used about half a jar)

Crescent Rolls: FREE

Salt, Pepper, Garlic Powder
Total Meal Cost: about $2.38

1. Preheat oven to 350.

2. Mix your meat, veggie, cheese, mayo, and seasonings to taste and desired consistency.

3. Place two crescent triangles together at their broadsides. Repeat and overlap the two large triangles as shown.


4. Place filling. (Broccoli not shown in image due to stubborn toddlers.)
5. Pull up the small ends, twist, and lay flat.

6. Repeat with remaining crescents and filling.


7. Bake for 17 minutes or until dough is cooked through and golden brown on top.


Enjoy! (BTW, those pretty little flowers in the background were brought to me by aforementioned stubborn toddlers. Broccoli absence forgiven.)

Ok, this may be harder than I thought!

Before I did the math, I thought I was way under. April 1st thru 7th, I spent $58.67 on grocery & drug store items. So I was only a little under. Hmmmm...

I spent $9.03 on newspapers this week. I got 7 because it was such a GREAT week with 5 inserts. I included that $9.03 in my $60 budget.

I'm also apparently not done buying baby formula. Bebe Girl goes through it so fast! She has her next doctor's appointment on April 30, and hopefully she can start drinking regular milk. That was $10 of my budget.

I'm sticking with the $60 budget for April, though.

You know, the funniest part is that 70% of that total is probably sales tax!

Brookshire's Update

As I mentioned here and here, I have encountered a couple of cashiers manually entering my IP's so that they will not double or triple when the coupon says "Do not double or triple".

Today, I was checking out with my favorite cashier, and I talked to her about it. They are now practicing this as store policy. Apparently, they should have been doing it all along, but it is just now being enforced.

Once again, I believe they have the right to do this when the coupon clearly states "Do not double or triple".

It will definitely affect my shopping trips, and my weekly coupon matchups will reflect this to the best of my ability. When I have already printed the IP's and no longer have them, I won't always know if they say DND or DNT.

All of this took place at the Brandon location off of Lakeland Drive. I have not been to another location yet to know if they are enforcing the same policy or not.

I am also not sure about MQ's from Sunday inserts that say "Do not double or triple" and if they are using the same manually entered method.

How Did I Do Last Month?

I didn't spend a single penny at CVS! Can you believe that? Between ECB's and gift cards (and a lack of astonishing deals...), I didn't have to spend any OOP. I saved a total of $184.79.

I did some damage at Walgreens. $71.20. I still don't think that's too bad. Less than $20 per week and that's where I got all my daughter's formula and diapers in March. Not to mention all the other stuff--soap, deo, razors, shampoo & conditioner, oral care, some food items, etc.! I saved $543.36. It was a good month at Wags.

At Kroger, I spent $78.10 and saved $170.36. We did get a little frivolous (a.k.a. LAZY!) with our some of the Kroger trips. It's so close to the house that when we're feeling lazy, we just pop in there and grab stuff. I need to tighten up on that.

Brookshire's was where I spent a lot. $173.55 with a savings of $527.81. I did a lot of stocking up though--including meat for my freezer.

I've been toying around with a $50 weekly budget for grocery & drugstore items. Most weeks it seems to be enough, but not always. For April, I'm going to go with $60 a week and try to be STRICT! I have a good stockpile now, so I should be able to do it with a little discipline.
